Once a Month Cooking Begins!

This has been a long a crazy Cooking Day, but hopefully the pay-off will be worth it! I've been introduced to a book called "Once a Month Cooking." They provide several 2 week or 4 week menu options to choose from, provide the ingredient shopping list for your chosen menu, and directions on how to prepare all these meals in one day to be frozen for later use. My 14 meals took about 1/2 of my freezer space - great! Here are a few notes from my first day:
1) Every recipe in this book has a meat included - tough for vegetarians.
2) There were a few mistakes in the ingredient lists, so some guess work and ad lib cooking were used.
3) There was 1 spice that I couldn't find in 2 different stores "pure horseradish (spice)".
4) The intructions for cooking this meat or cutting it, were confusing, and turned out to be inaccurate.
5) Chopped fresh parsley is very fragrant!
6) Thanks to Meryn's suggestion (a gal who came over to help with the boys), I used swim goggles on my eyes to prevent tearing when I cut onions. This is a big problem for me, and I was
dreading chopping up 7 onions, but the trick worked out great! I felt a bit goofy!
7) It was a very interesting and educational day and I'd really like to work on menus using my own recipes in the future, since I had several troubles with the lists and recipes in the book.
8) There are 3 days involved with cooking day: 1st is planning day, 2nd is shopping day and 3rd is cooking day. I almost didn't get it all done, though in one day!
9) Perhaps tomorrow I'll look into some of the freezer dessert recipes they have! (Dean wanted to know about those!)
10) I think I will do this again! Hopefully on a day when Meryn (or other excellent child care) can come back over!

Here are the recipes I made: Herbed Chicken, Winter Pot Roast, French Stuffed Potatoes, Chicken Nuggets, Playoff Burgers, Farmer's Casserole, Poppy Beef, Pizza in a Bowl, Country Captain, Denise's Black Beans, Chicken Taco Salad, London Broil, Mexican Chicken Lasagna, and Sopa de Maiz.

Dean's put a coat of our neutral paint over the primer tonight! Great job!

Wow! Those goggles really suit you! The cooking in bulk sounds like a great idea! I think I may try it. Dean has done a great job painting. That room looks so much brighter!! Good Job! -Emily

I can harldy wait to get reviews on how you like the meals that you cooked-I know that you are going to love the fact that you have all those meals in your freezer just ready to go at a moments notice. The family room is looking amazing. Love-Mom

Glad to hear you survived the cooking game. Now let the eating begin! It sounds like a great idea and hope it works out. I'll be looking for recipe reviews from you guys. Dean, I like the new wall color. It really seems to brighten up the room. Do I understand correctly that you couldn't paint, watch the boys, talk on the phone, and cook dinner all at the same time? Oh, right, your name is not MOM. Sorry, just a mom joke! Love you all, Nana/Mom

Onions have the same effect on my eyes too! I'll have to remember the goggles idea and hope it doesn't scare the kids. :)

1) I know several Sara's (and Sarah's) and Emily's, so please leave a last initial at least for me, friend/sister! I'm guessing Sarah Walsh and Emily Suski... I pretty much know only 1 Martha, so you're good.
2) For my mom: you can definitely tell that my name is not "Daddy" b/c when I half-heartedly offer to paint, Dean just laughs.

Julie- Love the goggles! I belong to a "Freezer Club" through MOPS and we trade meals at the beginning of the month. It works out to one frozen dinner a week usually and is such a big help. Don't know if I could pull of the cooking for a month thing- mostly b/c I know it would be consumed in two weeks:) (Do you have trouble keeping groceries in the house??)
